I’ve talked probably a million times on this website about how much I love soup season. They’re warm and comforting and can be so rich in flavor. Today, I’m including another soup with great flavor to mix it up. I had a ton of fun making the video for this one and it’s one of my new favorite recipes. It’s made with all whole food ingredients and is friendly to most diet and nutrition plans.

1 Onion, chopped
2 cloves of garlic
1 medium jalapeno, de-vined and seeded
2 cups of tomatoes, chopped
Allow to simmer 5 minutes, until onions become soft
1 can of your favorite tomatillo (green) salsa
One box of chicken broth
2 cilantro lime chicken breasts, baked and chopped
1/4 cup dried cilantro
1 can full fat coconut milk
Mexican spice seasoning:
1 tbsp cumin
1 tbsp chili powder
1 tbsp garlic powder
1 tbsp onion powder
1 tbsp Himalayan pink salt
1 tsp corriander
1 can black beans, drained and strained
1 can kidney beans, drained and strained
1/2 lime, juiced
Stir well and allow to simmer 15 minutes
