Just like it sounds- very similar to ice cream but is sweetened with natural sweeteners, and made with whole foods which is speaking my language. The creaminess of the avocado is what gives it the texture that makes it really similar to ice cream. I add protein to mine, and tend to eat it on days that I lift and want a sweet treat afterward. If you don’t need more protein, leave the protein out.
What you’ll need (base):
1 banana, chopped and frozen
2 ripe avocados, peeled and pitted
2 tbsp maple syrup, honey, or agave
1 tbsp vanilla
2 tbsp lemon juice
1/2 can full fat coconut milk, shake well – I get mine at Trader Joe’s!
Blend all items together in a blender or food processor. Place in a large bowl or loaf pan- seal with Saran wrap and freeze for 2-3 hours. Eat immediately or place in fridge.
Delicious, easy and made with whole foods.
**NOTE** The avocado may brown a bit along the top of the bowl or pan- this is naturally occurring because of the oxidation of the fruit- just skim the top with a spoon.
