Easy to make and perfect to enjoy even on a week night- fajita vegetables are an easy and perfect addition to any meal. I love to make them when I do homemade burrito bowls, or add them to taco meat or even eggs in the morning. Fajita vegetables are easy to make, fast, delicious, full of flavor, and easy to clean up making them a sure-fire favorite you’ll want over and over again. I often just eat these with rice, beans, hot sauce and salsa making them a great vegetarian or vegan option as well.

Preheat the oven to 350 degrees
Cut up into long strips:
-Green, red, yellow pepper medley
-Red onion
-White onion
-Slice Tomatoes into eighths
Line the veggies on a sheet pan & drizzle with olive oil.
Salt & pepper to taste
Let back 10-15 minutes, or until veggies are tender
Let cool and they are ready to serve!
