I put pico on everything, so no one should be surprised that I have a tried and true pico de gallo recipe that I’m obsessed with. I put it on eggs, chicken, tacos, you name it. The best part is that it’s easy too.
In a bowl, mix together
3 cups cherry tomato, chopped
1 white onion, chopped
1 bell pepper, chopped
1 jalapeno, devined, seeded, and chopped
1/4 of a bunch of cilantro, chopped
Juice from 1/2 a lime.
Add light salt.
This needs to sit to get all the flavors, so if you can make it a day or a couple of hours in advance, you’ll love it that much more.
