One of my favorite pairings with meat or eggs is a good veggie medley. Veggie medleys can be made on the cheap, are a great source of vitamins and minerals and can be made either stovetop in a giant pan like this one or on a sheet pan in the oven. Make sure you’re cooking with good fats and that you get some great seasonings so that you never get bored- although getting bored with veggies is tough because they all have their own unique flavors.

To make this medley, which pairs well with lean meats like turkey, chicken, or skirt steak, follow the recipe below. I also reheated it and fried an egg over the top of it and it was delicious. You can always just eat it on its own, too!:
Heat one tablespoon of coconut oil in a skillet on medium heat
Add in the following veggies, chopped:
1 cup yellow squash
1 cup zucchini
1/2 cup bell pepper
1/2 cup white onion
1/4 cup carrots
