(1) Spaghetti squash:
– wash outside of squash and pat down with paper towel so it is not slippery
-cut in half lengthwise (stem to end)
-remove seeds
-drizzle with olive oil and ensure entire squash surface is covered
-place face down on a parchment-lined pan
-Bake 45 minutes to an hour at 400 degrees

(2) Zoodles:
-You’ll need a spiralizer for this one
-cut top and bottom off zucchini
-place on a paper towel and dab dry with another paper towel
-allow to air dry about 15 minutes… you want your zoodles to be a little dry when you put them in a pan
-These should only be tossed into a sauce at the very end of the sauce cooking and taken off immediately, otherwise the water seeps out of them, ruining the texture
-you can flash cook these in pan with heated olive oil on medium for 3 minutes and then add sauce

(3) Sweet potato toast or buns:
-Cut sweet potato in 1/8 inch thick slices
-bake at 350 degrees for 15-25 minutes. Potatoes should be tender but not cooked all the way through
– allow to cool completely before stacking or storing otherwise they get mushy and take a long time to toast
-Cook in a toaster or toaster oven to your desired doneness
