Greek quinoa salad

An oldy but goody lunch time favorite. I used to nosh on this when I was in chiropractic school but haven’t made it since…. And I’m sensing it needs a come back!! It’s so good and has such a refreshing flavor. The bursts of cucumber and tomato as you eat it definitely put it over the top and the feta and goat cheese crumbles add a nice texture element.

I’m a huge proponent of quinoa as a carb source because, while it’s considered a source of carbohydrate it’s also packed with protein.

**GF, DF, NF
1 cucumber, chopped
½ red onion, chopped
3 tomatoes, diced
Juice of lemon
Parsley, salt, and pepper to taste
Feta or goat cheese crumbles
Serve over quinoa + 1 tbsp extra virgin olive oil
