Spicy sausage, veggies, and shrimp

I tried a new recipe for meal prep this week after joining a new meal prep group. I was looking to try something new and different from my typical stir fry, soup, smoothie or salad. This recipe is one pan for ideal, easy clean up for your busy life and super simple to follow, so people who are beginners to meal prep can enjoy it too. Healthy, easy, and delicious – totally my thing. I use this as a couple of meals in and of itself, but if you want more of a carbohydrate source and for it to last a little longer, add 1/2 cup of rice for a well proportioned meal. Here’s my spin on it:

Preheat oven to 400 degrees
1/2 lb chicken apple sausage
1/2 lb shrimp
1 zucchini
1 yellow squash
1 red bell pepper
1/4 of 1 medium white onion
1 bundle of asparagus, trimmed (I cut mine at the base of the stems, threw away the bottom portion of stems, then cut in half again)
Drizzle with olive oil (use more if you like your veggies softer, less if you like more firm). I used a mix of regular olive oil and chipotle infused olive oil
2 tbsp French Seafood Seasoning
1 tbsp red pepper flakes
1 tbsp garlic powder
1 tbsp onion powder
Let bake 15-20 minutes – I like my veggies tender, take out earlier if you want crisper veggies
